Our Sydney lolly warehouse is a bit more complex than you might have imagined. Much like large-scale Australian government organisations, we have a wide range of departments on-site with several expert sub-specialisations. There's the Department of Flavour. Within this team, there are experts that deal with sweet, sour, bitter and salty products specifically (cross-pollination is facilitated and encouraged). Then there's the Department of Texture. Within this department we have the squishy specialists, the chew crew, the crunch bunch and the cream team. The candy covered chocolate department is a whole new field of research in the Department of Texture: an inter-departmental collaboration between the crunch bunch and the cream team. These guys really know what they're talking about.
